Spanish Rice

This easy-to-make side dish can do double duty as a main by just adding in some sliced, plant-based sausage.

Ingredients

  • 1 tbsp vegetable oil
  • 1 cup white rice
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 8 oz can of tomato sauce
  • 2 cups water
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Heat the oil in a medium-sized pot.
  2. Add the uncooked rice and fry until golden.
  3. Add the diced onion and minced garlic.
  4. Cook until the onions become translucent (about 4 minutes).
  5. Add the tomato sauce, water, salt, and pepper.
  6. Bring to a boil, cover, reduce heat to low, and simmer on low for 15 minutes.

Optional

  1. Serve with beans, avocado, salsa, or shredded vegan cheese.
  2. Eat the mixture in a tortilla or taco shells.
  3. For a high-protein meal, mix with vegan burger crumbles.
