This easy-to-make side dish can do double duty as a main by just adding in some sliced, plant-based sausage.
Ingredients
- 1 tbsp vegetable oil
- 1 cup white rice
- 1/2 yellow onion, chopped
- 2 cloves garlic, minced
- 8 oz can of tomato sauce
- 2 cups water
- 1 tsp salt
- 1 tsp pepper
Instructions
- Heat the oil in a medium-sized pot.
- Add the uncooked rice and fry until golden.
- Add the diced onion and minced garlic.
- Cook until the onions become translucent (about 4 minutes).
- Add the tomato sauce, water, salt, and pepper.
- Bring to a boil, cover, reduce heat to low, and simmer on low for 15 minutes.
Optional
- Serve with beans, avocado, salsa, or shredded vegan cheese.
- Eat the mixture in a tortilla or taco shells.
- For a high-protein meal, mix with vegan burger crumbles.
