					<description><![CDATA[I made this for dinner tonight!  The walnut taco meat intrigued me so I soaked them this morning along w/ another bowl of cashews and they were ready to go a few hours later.  I absolutely loved these tacos!  I made the cashew cream, pico de gallo &#038; guacamole.  I also added some fresh corn off the cob &#038; shredded lettuce.  I piled everything in small flour soft tacos and they were awesome!!!  I can&#039;t wait to try these on my friends!  I think what I loved the most was the subtle texture + crunch of the walnuts.  Also, the fresh toppings made the whole thing amazing.  In the past, I have tried tofu for taco meat but I definitely like this better as the walnuts have better texture and absorbed the seasonings perfectly.  Can you tell I loved this recipe just a bit?!]]></description>
