Chocolate Cake

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tbsp cocoa powder
  • 1 tsp vanilla
  • 1 tbsp white vinegar
  • 5 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease and flour a 9” cake pan.
  3. Whisk the dry ingredients together in a bowl.
  4. Add the vanilla, vinegar, oil, and water. Gently mix. A few lumps are okay—if you overmix the batter, the cake will be tough.
  5. Pour into the prepared pan and bake for 25 minutes. Test by poking a toothpick or knife into the center. If it comes out gooey, bake for another 8-10 minutes.

Simply Fudgy Frosting

Ingredients

  • 1/2 cup Earth Balance or any other vegan butter
  • 1/3 cup non-dairy milk of your choice
  • 1 tsp vanilla
  • 2/3 cup cocoa powder
  • 3 cups powdered sugar

Instructions

  1. Melt the vegan butter in the microwave or on the stove.
  2. Whisk in the milk and vanilla, then the cocoa and sugar.
  3. Add more sugar to thicken or more milk to thin the frosting to a glaze.
  4. Wait for cake to cool fully before frosting.
