Cashew Cheese Sauce

Try this simple cashew cheese sauce—perfect for nachos or your go-to pasta dish!

Ingredients

  • 1-½ cups raw cashews
  • ¾ cup water
  • ¼ cup nutritional yeast
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp turmeric powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp lemon or lime juice

Instructions

  1. Cover the cashews with boiling water and let sit for a minimum of 15 minutes.
  2. Drain the cashews and add them to a blender or food processor.
  3. Add all the other ingredients. Blend until smooth. Scrape down the sides as needed.
  4. The sauce will be thick. If you’d like it thinner, add water or olive oil 1 tbsp at a time until you have the desired consistency.
  5. Pour directly over hot, freshly cooked pasta or vegetables. Can also be heated on it’s own and served with chips or used on nachos.
