Ingredients
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp salt
- 4 tbsp cocoa powder
- 1 tsp vanilla
- 1 tbsp white vinegar
- 5 tbsp vegetable oil
- 1 cup water
Instructions
- Preheat oven to 350°F.
- Lightly grease and flour a 9” cake pan.
- Whisk the dry ingredients together in a bowl.
- Add the vanilla, vinegar, oil, and water. Gently mix. A few lumps are okay—if you overmix the batter, the cake will be tough.
- Pour into the prepared pan and bake for 25 minutes. Test by poking a toothpick or knife into the center. If it comes out gooey, bake for another 8-10 minutes.
Simply Fudgy Frosting

Ingredients
- 1/2 cup Earth Balance or any other vegan butter
- 1/3 cup non-dairy milk of your choice
- 1 tsp vanilla
- 2/3 cup cocoa powder
- 3 cups powdered sugar
Instructions
- Melt the vegan butter in the microwave or on the stove.
- Whisk in the milk and vanilla, then the cocoa and sugar.
- Add more sugar to thicken or more milk to thin the frosting to a glaze.
- Wait for cake to cool fully before frosting.
